Roasting veggies are extremely famous especially nowadays, as more and more people are trying to eat healthier.

Italians know that and they have many recipes with this kind of vegetables. One of them is the dish with the roasted tomatoes.
Tomatoes are well known and beloved to many people. Here, you will find a different kind of approach to eat them!
For this recipe, you will need only 10 minutes for preparing the dish and 80 minutes for roasting it! The amount of time in total needed is estimated at 1 hour and 30 minutes.
This dish belongs of course to the Italian cuisine and the ingredients mentioned below are sufficient for 4-5 servings. Have that in mind, if you want to invite some friends!
20 large roma tomatoes (Info: Roma is a kind of sweet tomato, which is also mainly used in sauces.) ~ ⅓ cup olive oil ~ 6 cloves of garlic, minced ~ 1 white sweet large onion, diced ~ 1 Tbsp. Italian seasoning ~ 1 Tbsp. sugar ~ Fresh sprigs of rosemary, thyme and oregano ~ Kosher salt and pepper ~ Parchment paper.

In order to have a clean kitchen after the preparation of this dish, you will have to line a large parchment paper. Remember to preheat your oven to 150°C.

1. Step 1

Place the roma tomatoes in a large bowl adding some olive oil, garlic and onions. If you have some Italian seasoning, it will be great and it will add an extra flavor to your dish. Don’t forget the sugar, as the tomatoes may be sour.

2. Step 2

After this toss them gently. Try to spread the tomatoes and place them in a large pan. On the top of them you can also cut some extra onions with salt, pepper and the herbs, which have been removed from their stems and tearing up the leaves.

3. Step 3

Put the prepared dish in the oven and roast for 1 hour. Turn the temperature up to 200°C and roast for another 15-20 min. Your dish is ready! You can either eat the tomatoes hot or let them cool and blend them for an amazing sauce.
